Eggplant Pasta with Garlic Bread


I just made up the Pasta with left-over vegetables in my refrigerator that were eggplant. tomatoes, artichokes, onion and garlic.
It came out pretty good.
For the garlic bread I made the No-Knead Whole Wheat Bread again. I like this bread because it's easy and quick and of course tastes good.

Palak Tofu


I made Palak Tofu from Fatfree Vegan Kitchen.
It was nice amount for 2 people included small side dishes which we had potato salad and steamed vegetables.
I used garam masala instead of curry powder. It came out pretty spicy. Maybe I'll make it a little less spicy next time. I enjoyed it.

Great recipe. This is definitely a keeper.
They are light, moist and not too sweet.
I used brown sugar instead of maple syrup.
I will use applesauce instead of oil to make them fat free next time.
I love this muffins.

Oatmeal Energy Bar


I adapted this recipe.

Here is what I used

* 1/4c Flax seeds instead of 1/3c of Flax meal
* 1/2c dried fruits- Cranberry, raisins and dates
* 2/3c Nuts- Peanuts, and Sunflower seeds
* 2T Agave nectar
* 7T Apple sauce instead of 1/3c oil and one egg

It turned out pretty good. This is a good way to eat variety of nuts and dried fruits. Yum.

Creamy mashed potatoes



I went to a local flea market and bought an old fashion style hand mixer for three dollars.
Cg used the hand mixer, which works really good, to make the creamy mashed potatoes for our dinner.
It came out delicious! yum.
Also Cg's mom bought me a cast iron pan at the flea market. I cannot wait to use it.

Granola


I made this Granola from Vegunyumyum .
It is a very simple recipe and tastes good.

This is my first experience buying Agave nectar which is an awesome discovery.
