
I couldn't wait to try this eggplant rolls after I saw this VeganYumYum's post.
It turned out pretty good. I baked the eggplants with olive oil and filled with tofu ricotta then served with tomato / celery sauce.
The caramelized eggplants were so delicious that melted on my tongue with the full of flavor of sweetness, and creaminess.

I think baked eggplant is my favorite way to make it (the test-recipe rolls that I made were breaded and fried - they tasted amazing, but were more of a pain than baking).

That's ok.
I had such a small eggplant that couldn't be a main meal so I made stuffed shells too. I cannot buy the new book from PPK!!!
